Any concepts for a Champagne vinagrette recipe?

Concern by clueless: Any tips for a Champagne vinagrette recipe?
I just had a wonderful lobster salad on a bed of combined greens at Funds Grille. The combined greens have been coated with a Champagne Vinagrette. The vinagrette was thick (like it might have experienced corn starch in it.) It also appeared that it could have experienced little bits of pineapple in it (perhaps to sweeten it.) Does any individual have a recipe that may possibly in shape hit the mark? Or a good friend at Money Grille? Many thanks for the aid!

WHEN YOU MAKE A VINAIGRETTE THE INGREDIENT THAT MAKES IT THICK IS MUSTARD,START WITH CHAMPAGNE VINEGAR,MUSTARD,LITTLE BIT OF SUGAR,OLIVE OIL AND SALT AND PEPPER TO TASTE.
