While most seasonings are added at some point during the cooking process, there are certain spices that are considered good after cooking options. It’s nice to have a pie quickly when unexpected guests arrive. When you don’t have time to create the crust from scratch, use a quality pre-made mix. Add a few tablespoons of sour cream to make the crust flaky so no one will notice that you didn’t create the pie from scratch.
Microwaving a lemon or a lime for a few seconds can release the juices. Sometimes the citrus at a grocery store is not as fresh as it could be, making it difficult to juice. If you microwave it for 10 seconds, and then roll it between your hand and the counter it will release more juice.
Take care when storing chocolate for use in cooking. As a rule, only buy as much chocolate as you can use within a few months. Chocolate contains fat, and under the wrong conditions it can turn rancid. Store in a cool, dry place away from sunlight. A kitchen cupboard away from any heat sources is ideal. Keep the chocolate wrapped in foil or plastic and store it away from anything with a strong smell, as it absorbs odors easily.
Do a little research and find out if there is a farmers’ market within shopping distance. These markets – usually held on a weekly basis – are your ticket to purchasing the very freshest ingredients available. Treat food from a farmers’ market with respect; usually, the less cooking you do to such ingredients, the better-tasting the results will be.
If you are stuck trying to figure out what to cook for dinner during the week, consider building your meals around themes. “Mexican Monday” could mean burritos or a nice taco salad. How about “Tuscan Tuesday” featuring spaghetti and meatballs or maybe meatball subs? And “Fish Friday” offers lots of options for shrimp, salmon or even tuna. Bring the whole family into the fun by letting the kids pick a theme and help plan the meal that day.
In recipes that call for milk or water, try substituting more flavorful liquids. You could use chicken broth or juice, instead of water. Instead of milk, try sour cream, yogurt or buttermilk. A good method for increasing your nutritional intake is by increasing the amount of liquids you drink throughout the day.
