I don't consider myself a master of the culinary arts but I'm certainly no slouch either. I enjoy cooking cuisines from all across the globe. Not a single vegetable, protein, or spice can be overlooked. In my quest to make tasty and delicious meals, I came across this treasure of a book. Now, I'm not a regular vegetarian eater but I surprisingly eat it more than I realize (mushroom soup is one of my favorite foods). I know there's a big negative stigma when you hear the word "vegetarian" but if you just open up to the concept for even a brief moment you will enter a world of flavor and health you would never think possible. I was introduced to vegetarian cooking by a friend of mine and they lent me a copy of this book so I could try out a few recipes. She is a vegan baker and literally makes the best cupcakes I have ever eaten. I don't think I can switch back to non-vegan baked goods anymore thanks to her.

This book starts out with some testimonials from real people (and not just doctors) about how they got started in vegetarian/vegan cuisine. It's a very good way to introduce someone to this concept because you can see how other people went through similar experiences. I really enjoyed that aspect of the book and it helped structure and build a strong connection. I thought I was only going to find a handful of recipes collected through this book but at 90+ pages, this is almost the definitive guide to vegetarian and vegan eating. The best part about all of these recipes is their simplicity. Most of them have a maybe 3-5 steps and then you can start eating. There's nothing overly complex. Anyone who wanted to learn how to cook could easily pick up this book and dive right in.

Time to answer the big question. Do all of these recipes taste good? I can safely say from the dozen or so I tried, it is a resounding yes. Now, some things may not be for everyone. If you're not a fan of broccoli before you may or may not be converted. However, these recipes will take food that you normally didn't think were anything special and turns them into something extraordinary. My favorite recipes is the aptly named "Mushrooms a la Happy". It's six simple ingredients that lifts vegan meals to a whole new level.

You will have a new appreciation for vegetarian and vegan cuisine after trying some of these recipes. And the best part, they're all healthy and taste delicious. It's almost unfair how good everything tastes. I've pretty much cut meat products out of 80% of my meals now and I don't even miss them. This is one cookbook you and your family will never get tired of. I'm definitely getting a copy of a book myself. It's simply fantastic and you can't go wrong with a recipe book this good.

I bought this book and a few others because I have recently decided to take steps to improve my diet and my health. My goal is to reduce the amount of fat, sugar, dairy and red meat that I eat. I am really happy that I purchased this book. It really is broken down in a way that makes it very easy to read and it is also very informative. I have made many of the recipes in this book and they are written in a complete and easy to follow way, they contain ingredients that are mostly easy to find and most importantly the taste wonderful. I would recommend this book to anyone who is interested in eating healthier.

The beginning of the book contains the positive personal experiences of several vegans, which I found to be very helpful and encouraging. However, as I skimmed through the recipes, I quickly realized that I will not be turning to this book to prepare vegan meals. It relies heavily on processed vegan foods, which are not only expensive, but can also be loaded with sodium and other ingredients that I believe defeat the purpose of turning to a plant-based, whole-foods diet.

Choose the correct apples when making apple pie. The best apples for an apple pie should always have a firm texture and slightly tart flavor. Good varieties include Granny Smith, McIntosh and Jonathan. If you are unsure of which apple to choose, ask the produce manager for an all-purpose baking apple.

After you have cooked a piece of food in the oven, you should give it several minutes to rest before serving. The last thing that you will want to do is serve any part of your meal that is too hot, which will ruin its overall quality for the person you are serving.

Experiment with different breadings for everything from chicken to vegetables to appetizers. To add an extra dimension of flavor to breaded foods, try using coatings other than the usual breadcrumbs or panko. Get creative! Cereals like corn flakes, toasted o’s, and crispy rice work well too. Don’t forget to try crushed crackers and cookies as well.

If you’ve forgotten to soak your beans over night, quick soak them instead. Just put the beans in a very large pot and cover with water. Bring this to a boil, then lower heat and simmer for about two hours. This method is just as effective as an over night soak and can save you time.

Buy tough cuts of pork or beef instead of steak. Steak is expensive. While it might be one of your favorite foods, you probably are not willing to pay for it as often as you would like. Consider buying a tough cut of pork or beef instead. Cook it low and slow to get it tender.

Damp paper towel and a plastic bag can extend the life of your greens. If you wrap your fresh herbs or fresh greens with a damp paper towel and then place them in a plastic bag, they will last longer. They will normally stay fresh three to four days longer if you do.

To sear a rib-eye, T-bone, strip or other steak to perfection even when you can’t fire up the outdoor grill, flip a cast-iron skillet over and broil the steak in your oven. Heat the skillet in a hot oven prior to placing the steak on its surface, and cook to your preferred level of doneness.

Don’t get caught out when entertaining. If you are entertaining 8 or more people, aim to serve four different kinds of hors d’oeuvres. Each from one of the following categories: fish or shellfish, meat, vegetables and cheese. Bite-sized pieces are ideal, with the exception of veggies for dipping. When figuring out the amount of hors d’oeuvres, try to offer 6 pieces per person per hour.

A common goal for many people today is to incorporate healthier cooking methods into their daily meal plans. Healthy recipes sometimes seem to be dull, boring, and lacking in taste however, and that is not something that appeals to anyone. So how can you cook healthier and still make meals that your family will love? In this article we will discuss a few tips that can help.

When roasting any type of meat, ensure that when you remove it from the oven you give it time to “rest” before you carve it up and deliver to the table. Allowing the meat to sit in its own juices for ten minutes or so will make sure that the meat is not dry or overly chewy.

When you are deep frying foods, try not to fry too much food at once. Overcrowding the deep fryer, will cause the oil temperature to drop and the food will not be as crispy. The key to successful deep frying is to keep enough oil around the foods to keep up the temperature.

When cooking sometimes less can be more. What this means is that the next time one is going to add a spice or other flavor enhancer to their dish they should make sure to not put in too much. Having a small amount can make a nice subtle flavor while too much can ruin the taste.

Remove roasts, chickens, pork loins, or hams from the oven just a couple of minutes before they reach their ideal temperature for perfectly cooked meat that isn’t too dry. The meat will continue to cook for the first couple of minutes outside the oven, bringing it to a safe temperature.

When you are cooking clarified butter, first slowly melt butter that is unsalted over very low heat. Do not stir the butter, and do not let it comes to a boil. This process will separate the milk solids from the liquid butter into three layers when finished. The clarified butter will be in the middle layer.

A great cooking tip is to consider staying away from store bought seasonings. This is especially important because not only can they be extremely expensive but they might also contain large amounts of sodium which is never good for your health. Consider making your own spices or adding different foods to give your food a great taste.

One of the best ways to store green vegetables so that you can increase the lifespan that they have, is to store them in a damp paper towel and place them in a plastic bag. This will keep the nutrients in them and retain the freshness that they need to remain tasty.

I have never forgotten my very first taste of Mexican food. I was about three, I think, and a friend of my mothers had mailed her some "Mexican" from New Mexico. Back then you couldn't buy so much as a can of refried beans anywhere in New England! Frankly, it wasn't very good. I've never touched canned tamales since. But, my Mother did love Mexican food dearly and of course that influences me even all these years later. I've been cooking my own since I was a teen, back when the only Mexican to be had in all of New England were the tacos at Riverside Park, now Six Flags. Along the way, I've been lucky enough to live in the American Southwest and make a number of friends in the Mexican-American community. I can give you directions to several outstanding Mexican restaurants across the Continental US, but Jared McDaniel, author of Delicious Authentic Mexican Food: Easy Mexican Recipes for Cooking the Perfect Mexican Meal is exactly right when he says that what you make yourself will be better than anything you can buy out - at least most of the time. There still are very few decent Mexican restaurants in New England, so I indulge myself at least several times a week and "Mexican" is by far the largest ethnic section in my huge (600 and counting) library of cookbooks. I figure there is no such thing as too many Mexican cookbooks, so my collection contains more than a few.

As I sit here typing this my kitchen is redolent of chile, beans and chorizo and even though I've just finished a Mexican Pizza dribbled with Jared's Red Sauce, the smell is enough to make my mouth water. Nothing smells better than homemade Red Sauce and Jared's recipe is spot on, though I will admit my Red Sauce is closer to a brown sauce. I used half chile pasilla and half chile ancho because that is what I had handy for dried chile. Yum, yum! I ended up with plenty for several meals and some to freeze. (This could easily be used as Enchilada Sauce and this is likely what I will do with most of it.) The Mexican Pizza - really sort of a flat Navajo Taco - was scrumptious. (I still have some of that sauce on my chin LOL.)

What McDaniel has given us in Delicious Authentic Mexican Food is not really Mexican. Certainly it isn't Mexican haute cuisine, but it is without a doubt what most Americans know as Mexican food - street food really, the stuff of a quick lunch from the taco stand. That doesn't make it any less good. In fact, street food is some of my favorite "Mexican." I'm sure you'll find some of your favorites here too.

Delicious Authentic Mexican Food is pretty nicely put together. There is a picture for nearly every recipe. There is a Table of Contents so you don't have to page through recipe after recipe to get to the one that you want. Jared provides a nice discussion of Mexican ingredients that are commonly found across the US. One feature that I particularly liked is a very nice illustration of the various commonly found fresh chiles along with their name and description. As I recall, none of the rest of my Mexican collection has been thoughtful enough to provide pictures.

I did find a couple of things that might be improved on. For some reason, the Table of Contents does not show up in the Kindle menu. You'll need to click "Beginning" and then turn a page. (This seems to be all too common with Kindle cookbooks.) Some of the recipes start in the middle of a page. My bookmark for the Red Sauce recipe reads "tomatillos and chiles, cover and cook" - the first words on that page - and it would have been very nice if the ingredient listing for Red Sauce in the Mexican Pizza recipe, which reads "Red Sauce (see recipe)", had been turned into a link that took me to the Red Sauce recipe. I do wish that Jared had used fewer canned beans and perhaps given a recipe or two to make your own. Nothing is easier than beans. All in all though, Delicious Authentic Mexican Food is very nicely done. I think you'll enjoy cooking from this one.

This cookbook really hit home for me. I lived in San Diego for MANY years and really was so lucky to come across some of the BEST Mexican cooks ever while there.
This book has some great recipes that anyone can make...they are not difficult, you just follow along and you will be a great Mexican chef in your own kitchen. He also offers something that Ive NOT seen in other E-cookbooks, he has great pictures and explanations of the assorted peppers...and also explains about other items you will be using to cook with....I thought there was a LOT of time and expertise that went into this cookbook, its a keeper in MY kitchen!

This book has some good information on chiles - varieties, what to look for when buying, and handling information. It also has some basic information on other main ingredients used in the cookbook - rice, cheese, etc.

The recipes seem to be clear and straightforward, and I didn't spot any egregious errors.

I can't really address authenticity either way, but I can say that this is the type of recipe I use when I want to cook Mexican food. Some of the recipes are on the edge of "too simple to be a recipe" (such as the nachos one) but the inclusion is logical. I really like that the chicken enchilada recipe has instructions for making a sauce rather than using a canned cream soup.

I would have liked to have seen a couple of recipes for dried beans and/or refried beans - there are some basic instructions, but there are a lot more possibilities than just cooking beans in water.

There are a few typos and grammar errors here and there ("Mesican," "cut in to small pieces,") but not too many and the text is easy to follow.

I think the section at the end giving reasons to cook Mexican food at home would be better suited to the description rather than being included as part of the book, or possibly condensed a bit and included in the introduction. After all, these are selling points, reasons that someone might want to buy the cookbook, rather than text to be read at the end.

I picked this up as a free version for the Kindle and will be keeping it because I don't have a Mexican cookbook as of yet and this has some recipes that aren't in my current individual collection. If you like Mexican food, this probably won't have all the recipes you'll want, but it's a decent ground-level collection and may have some new ideas for someone who's more used to canned red enchilada sauce or fast food tacos.
