Todays theme ingredient for cooking lab was rack of lamb. We learned how to butcher and fillet the meat off the spine and ribs. It was quite grueling work, but lots of fun. (It involves lots of cutting through bone and scraping of tendons etc..).

We pan-seared it to a rosée doneness (about medium-rare to medium) and made a ”jus d’agneau” sauce by reducing a stock made from the scraps of the lamb racks. Served alongside is a ”Potatoes Annette” pan-fried julienned potato pancake.

If you are planning on buying fish from a supermarket or fish store, make sure that you ask the person behind the counter if you can smell the fish. The fish should be very firm and should not have any pungent odors to them. Otherwise, do not purchase it, as they are probably not fresh.

For pasta that is cooked perfectly all the way through, do not place it the in water until the water is boiling. Pasta cooks from the outside in, so to keep your pasta all one texture you need to cook it at the same consistent temperature from the beginning to the end.

To keep cookies from spreading while baking, chill unused dough and cool off cookie sheets between batches. If cookie dough is allowed to reach room temperature before baking, either in the bowl or on the pan, then the ingredients in the dough are doomed to expand. To get a dense yet still moist cookie, just chill the remaining dough between batches and cool an already used sheet in cold water before returning to the oven.

Try putting your chicken in an oiled roasting pan, instead of on a rack. Slice some thick pieces of onion and put them in the pan under the chicken, so that they will absorb the juice from it. After the roasting, add some stock or water to the pan with the onions to make a sauce while the chicken rests. Cook it for three minutes at high heat on your stove-top.

To prevent dense pie fillings like pumpkin from cracking after cooking, allow the pie to cool on the oven rack. Removing a pie from the hot oven and placing it on a cool counter can cause the filling to expand or contract and as a result crack. Allowing the pie to cool slowly on the oven rack is the best way to get an even, glossy finish on the filling.

I have to admit, you can't really make these recipes for 25 cents today. BUT, you can learn a lot about cooking in the 1800s by reading this novel.

Whether you want to discover how to clean a rabbit, take the feathers off a chicken, or use the parts of cows, sheep, and pigs that aren't in your cookbooks of today, you will have fun with this.

We had a neighbor growing up with a paper copy of a similar cookbook, and would spend hours laughing. Now you can laugh on your Kindle (whatever version you have).

The indexing and organization are better suited to paper (thus the removal of one star), but teachers who are teaching their students about American History might find some great passages that will keep their students intrigued.

I'm sure that "Twenty-Five Cent Dinners for Families of Six" by Juliet Corson was a great hit in its day; however, there are few recipes in this 1878 cookbook that any cook would make today. Oatmeal and peas? Sheeps' Head Stew? A pie of pork trimmings? Tripe, Curry and Rice? Suet-laden desserts? Barley water? Suet dumplings? Baked Pig's Head? No, thanks!

The book does serve to provide a peek into the culinary practice -- and necessities -- of 150 years ago. This book, unlike Corson's previous cookbook, "Fifteen Cent Dinners," was aimed squarely at the middle classes; even so, cooks in those days were reduced to, for example, preparing a main dish of rice, suet, flour, and molasses (made from a half-pound of uncooked rice and a quarter pound of suet) to feed themselves, a husband, and four children. A large fish had to be stretched into two meals for a hungry family of six. Many of the recipes are stews, broths, and soups made from neckbones. She also ensures that, in her recipes, "very little fat is wasted." Corson loves fatty gravy and "seasoned suet" -- whatever that is. Corson also can't resist make a pitch for temperance and against beer. And a glance through the cookbook shows that 19th century women spent HOURS cooking most days. "Hasty" pudding takes an hour, to give you an idea of how long.

Don't get me wrong: A few of the recipes do still hold up. Corson, ever frugal, lists recipes ("receipts" in her parlance) for making your own lemon and orange flavoring, vanilla extract, and tarragon vinegar. The rice pudding, bread pudding, fruit dumplings (which one would make with pie crust rather than a suety crust), stewed pears, Strawberry Drops, and most of the desserts look delicious. The Pork Pie, if pork chunks were substituted for pork trimmings, looks appetizing. The Roast Pork and Potatoes (reserved for Sunday) would pass muster today if it weren't cooked for two hours and doused with water.

Still, this isn't JOY OF COOKING, which has held up so well: It's more history text than cookbook.

Why would you not add a cook book to your Kindle??

This book has more than just the basics, for example when you get a pizza recipe, you don't just get the standard oven pizza recipe, you also get explicit instructions and hints for making a grilled pizza.

I am very pleasantly surprised by the number of illustrations that make this book even doubly helpful.

I just made the Shepherd's Pie from this book last night and it was a huge hit.

I made the cream scones for Sunday breakfast and they were heavenly.

The really great thing is that you can bring this cook book with you and offer to make a meal as a weekend guest and all you have to do is throw in your Kindle not a big bulky book.

As a bit of a cookbook addict, I couldn't resist a freebie from Cook's Illustrated. While it doesn't cover a lot of new ground for me, it does provide plenty of explanation of cooking basics, good knowledge to have if you want to come up with culinary creations of your own. I was pleasantly surprised with the illustrations. I wouldn't have expected them to work this well in the Kindle format. Nicely done. Hope to see more like this.

This is a book that's great for the basics in a number of cooking categories, and like recipes from Cook's Illustrated magazine, the recipes are well described and will work well for most anyone.

The thing of note is that the book is organized with an inverted-tree sort of menu such that it's easy to go to where one wants to go without much fuss (and to "go back"). It's organized to be easy to use in a Kindle -- not just a converted paper book with perhaps a table of contents or index.

It's a good book and very professionally tailored for the Kindle.

Yes, I got it for free as well in that I ordered it long long before publication when perhaps the publisher was gauging to see if there was interest in a Kindle cookbook product. But having seen it, I think it's easily worth the current $10 price. The freebie offer was stated as a short-term "order now" offer prior to publication. Had it still been free now, I'd have been upset at the previous deception.

P.S. - The head honcho of Cook's Illustrated himself has a Kindle and undoubtedly is the driving force for this book coming out (IMO). I think he's done a really good job in this first product and look forward to other Kindle designed cookbooks from his organization -- even if not free.
