Invest in a good roll of parchment paper. When you are baking, line your pans with it and you will save yourself much time and mess. The baked goods slide right off of the paper and all your pan needs is a simple rinse in some hot soapy water!
When you are cooking pasta you should cook it about 60 seconds less than the cooking time that is printed on the package. You can then put the pasta in whatever sauce you have prepared with it and let it complete its cooking process while it soaks up all of the flavors of the sauce.
When buying brussels sprouts, always look for the smallest ones possible. The smallest brussels sprouts, those that are less than an inch across, are much less bitter than their full-grown counterparts. Rather than boiling them into a mushy mess, try roasting them in the oven with a little oil, salt and garlic. If you can’t find small brussels sprouts, simply cut larger ones into quarters.
To reduce the odor that smashing garlic can cause to your knife and your cutting board, use a disposable plastic bag, and smash the cloves while they are inside of it with the back of a knife. This will also prevent your hands and fingers from absorbing much of the garlic odor.
Make your own stock for better tasting meals. You can easily make your own stock anytime you cook chicken, turkey, or beef. Retain the juices, and let the fat rise to the top, skim the fat, and freeze. Now next time a recipe you are making calls for stock, you will have fresh stock on-hand.
If a dish seems flat and boring, consider what kind of acidic component you could add. A dash of zest or squeeze of juice from a lemon or lime may be just what your dish needs to wake up. Or, try balsamic, white or apple cider vinegar, buttermilk, or sour cream to add a bit of tang.
Make ‘hands-free’ meatloaf. If you don’t like to get your hands messy when mixing meatloaf ingredients together, place all the ingredients in a large resealable plastic bag. Close the bag tightly and knead everything together until well mixed. Kids really enjoying helping with this, it’s a great way to get them involved in cooking!
Having trouble with your meats sticking to your pan or grill? This is an easy thing to fix. Just spray your pan or grill with a spray oil before you begin to cook. This will put a coating on the surface of the pan or grill, and will keep your meats from sticking to a dry surface.

Enjoyable romp, July 21, 2012

Girl meets boy, girl hates boy, girl ends up happy ever after with boy. That's the rather predictable but eminently readable storyline of "Cooking Up Trouble," Elizabeth Coldwell's take on the cooking shows that are all the rage on TV at the moment. When Morgan, a slightly overweight but lovable Welsh cook, is told she's going to co-host a cooking show with celebrity chef Scott, she's far from happy, because Scott has said some pretty disparaging things about her in the past and she hasn't quite forgiven him for doing so. When she actually meets him, though, she finds she's attracted to him despite his former rudeness. Soon their relationship begins to spark. But is it wise for two coworkers to get romantically involved? There's not much to fault here -- the heroine is likable and talented, the hero is a very attractive alpha male, and the story unfolds as such stories will, with plenty of chemistry and erotic tension along the way. A harsh critic might say there are perhaps a few too many fantasy sex scenes (it's almost as if the author's contract stated there had to be at least one sex scene every fifteen pages, and imagined love scenes were the only way to meet that requirement), but that's a minor complaint. Bottom line: this is a well-told and sexy tale that will keep you pleasantly occupied for an hour or so. It's well edited, too -- I only spotted three tiny mistakes, which probably makes it the best-edited Xcite book I've come across.

Let me start out by saying that this book was a very quick read. So if you are looking for something to read that is quick, romantic, and sexy then this is the book for you. I really enjoyed the heroine Morgan. She was very comfortable in her own skin. I really didn't like Scott in the beginning. He was rude and I just wanted to slap his face a couple of times really hard. But like Morgan, I too started to like him. As you read further into the book you find out why he is the way he is. Ms. Coldwell writes a very good story that has a female character that most of us can relate to and a male character that, by the end of the book, we would love to spend more time with in and out of bed. I look forward to reading more of this author's work.

What a scrumptious treat this book turned out to be. Morgan and Scott have a chemistry that definitely turns up the heat. I think that maybe Morgan should've confronted Scott about his past comments about her (from before they met), especially since they had bothered her so much. It was like she just forgot about them. Of course, I might have too with him creating new recipes on me.
